Picked late, when everyone else has already finished. Waiting for the October rains is a risk — shorter days, dew in the morning — but that is where Trebbiano Spoletino becomes something rare: elegant, fragrant, with a body you don’t expect from a white.
It is the wine you take to dinner to surprise anyone who thinks all whites are the same. Pear and ripe pineapple on the nose, an acidity that keeps your palate alive and takes you back to the glass. Seven hundred bottles a year, from a handkerchief of vineyard at Cannaiola.

The eye
Bright, intense pale yellow. A properly pale white with real body: the controlled late harvest gives full ripeness, in balance.
The nose
Very fragrant, very fruity: pear and ripe pineapple to the fore, floral notes, aromatic herbs, citrus echoes at the back. You can sense the acidity on the nose already — and it keeps its promise.
The mouth
Elegant, vertical, with great length. The acidity holds everything in balance: one sip invites the next. The wine that makes you say: let me taste that again.

The best things
live at the edge
It all starts with the pruning, deliberately late: March-April, to push the whole ripening cycle forward. Then you wait. The October rains bring the sugar down and concentrate the aromas of a late harvest.
This area lets you wait: dry seasons, thick tough skins. Fermentation in steel at 17-18°C; wood is not needed — here the elegance comes from the grape. And the fine lees have to be kept alive, stirred, tasted every day — they are what gives complexity.

Why risk October?
If you stay in the middle you don’t get the best things — you get them at the edge. It can rain for a week in October, but if the season holds, the skin stays thick and the wine turns out elegant, fragrant, with exactly the right acidity.
