Rosso
The red for all the good ordinary days. Sangiovese at 60%, the character of the native grape at 15%, and then Cabernet, Merlot and Barbera: here the complexity comes from the grapes, not from the wood. It is a deliberate choice — this wine sees steel only.
It is the wine I open myself when there are people at dinner. The freshness of the Barbera, the roundness of the Merlot, the tart note of the Sangiovese, the grassy note of the Cabernet: a balance that makes it easy to drink and asks for another glass, and another.

The eye
Deep ruby red — and it stays that way. Steel only: the color keeps its life and youth even years later.
The nose
Primary aromas to the fore: ripe red fruit and jam, forest-floor notes, a spiced close. The complexity comes from five different grapes meeting.
The mouth
Freshness from the Barbera, roundness from the Merlot, the tart note of the Sangiovese and the grassy note of the Cabernet. An acidity that accompanies without getting in the way: easy drinking, mouth-watering, and the urge for another glass.
How it is made · five grapes, no wood
The complexity

Fermentation in 40-50 quintal steel tanks, around 22-23°C. As soon as the alcoholic fermentation ends the temperature is raised and the malolactic starts on its own.
Then 18 months of ageing, all in steel. We leave the wood to the Montefalco Sagrantino DOCG: here we want clean fruit and a red that stays ruby even after years. And the best lees I taste and reuse, from tank to tank — that is where the wine is made.

The secret of the lees
If one tank of Montefalco DOC Rosso has done a particularly good malolactic, I move its lees onto the other tanks: they all improve. An old producer in Trentino taught me that — the wine really is made right there.
