Extra Virgin Olive Oil · 2026 harvest presale · 3 L tin
The family
size
3 L
Two thousand olive trees on three hectares at Colle Arfuso, 400 meters up, on clay and marl: 80% Moraiolo, the rest Frantoio and Leccino. We pick around 20 October and everything reaches the mill within 24 hours, cold extraction. What comes out is a deeply fragrant oil, soft, balanced — peppery just enough.
Three liters for someone who has already tried it and made up their mind: this is the oil of the house. The family size, for people who cook every day and want an oil you can taste — from Pietro’s breakfast to Sunday dinner.

The tasting · slowly, as it should be
Eye, nose,
mouth
The eye
Deep green when freshly pressed, then slowly golden as the months pass. The living color is the mark of cold extraction within 24 hours of picking.
The nose
Deeply fragrant: full fruit, grassy notes and the signature of Moraiolo at the center of the blend. That is the gift of altitude — you recognize it at once as new oil, real oil: a scent that transforms even the plainest bread.
The mouth
Soft and full of flavor, balanced, peppery just enough: the gentle polyphenol finish carries the food without ever covering it. You taste it, you recognize it, and afterwards you go looking for it again. It turns bread and oil into a dish.

The big tin pays off: more liters, less per liter, and the oil stays protected from light and air down to the last drop. Pour a little into a dark cruet and keep the rest somewhere cool.

How do I keep it?
In the dark and the cool, away from the stove. If you see white lumps in winter: that is completely normal, the oil is simply crystallising from the cold. Bring it back to room temperature and it returns exactly as it was. I explain it in the journal.
The cleverest way to buy it
V'Oliamo: the oil for all your recipes, with 15 days to try it
Choose your pack and it all arrives at your door — tins, a half-liter sample and a Deruta ceramic cruet. You try the oil at your own pace. If it doesn’t win you over, full refund — and the sample stays yours anyway.
I give Brunozzi oil to my son, I eat it myself. I only put on the table what we eat ourselves.— Giorgio Brunozzi
In the kitchen
- Warm bruschetta — I like mine with garlic rubbed underneath
- Pasta and pulses, soups and broths
- Grilled vegetables and salads
- Meat over the embers
★ A thread of it raw, right at the end of cooking: that is where you taste the difference.
