Two thousand olive trees on three hectares at Colle Arfuso, 400 meters up, on clay and marl: 80% Moraiolo, the rest Frantoio and Leccino. We pick around 20 October and everything reaches the mill within 24 hours, cold extraction. What comes out is a deeply fragrant oil, soft, balanced — peppery just enough.
The same oil as the tin, in a different skin: the Bag-in-Box pouch collapses as you draw the oil off, so the oil never meets the air — the last drop is as fresh as the first. Three liters with a tap, as convenient as having the mill in your pantry.

Deep green when freshly pressed, then slowly golden as the months pass. The living color is the mark of cold extraction within 24 hours of picking.
The nose
Deeply fragrant: full fruit, grassy notes and the signature of Moraiolo at the center of the blend. That is the gift of altitude — you recognize it at once as new oil, real oil: a scent that transforms even the plainest bread.
The mouth
Soft and full of flavor, balanced, peppery just enough: the gentle polyphenol finish carries the food without ever covering it. You taste it, you recognize it, and afterwards you go looking for it again. It turns bread and oil into a dish.

How do I keep it?
In the dark and the cool, away from the stove. If you see white lumps in winter: that is completely normal, the oil is simply crystallising from the cold. Bring it back to room temperature and it returns exactly as it was. I explain it in the journal.
